Small producers in Chiapas, Veracruz, and Oaxaca have cultivated classic varieties for generations, using traditional methods and with deep respect for the land. Decaffeination is done using the Mountain Water Process by Descamex: pure water from the glaciers of Pico de Orizaba, zero chemicals, and an aromatic profile that remains intact. The result is a coffee that clearly tells its origin—and has nothing to envy caffeinated varieties.
