Why oat milk splits in coffee, and which plant-based drink froths best

The espresso goes into the oat, and by the time you have put the cup down there are pale flecks turning on the surface. It happens with one brand and not with the next, more often with a light roast than with a dark one, and almost every time with the carton you were drinking cold out of a glass the day before. The coffee is acidic, the proteins in the drink gather at that acidity, and the heat gets them there faster.

Which of the four plant-based drinks handles that best, why a barista carton behaves differently from the one beside it on the same shelf, and how to steam them for a cappuccino or a flat white without losing the foam halfway to the table: that is what follows, with the labels read one by one.

The short answer, for a cappuccino at home: oat is the easiest and the closest to whole milk, with 3 g of fat per 100 ml and a sweetness that walks alongside the coffee instead of covering it; soya froths with the most structure, because it carries 3 g of protein and protein is what builds foam; almond lightens the cup and leaves the coffee in front; coconut takes the whole thing towards the tropical, and it wants choosing in the knowledge that there is soya inside it too.

Which is exactly why the part that does not suit us is in here as well: if lactose gives you no trouble and what you are after is the cappuccino your local coffee shop makes, whole cow's milk is still the easiest road and the cheapest one.

Why does oat milk split in coffee?

Split, curdled, separated, flecked: the word changes with whoever is describing it, and underneath there is one piece of chemistry. A good espresso is an acidic drink, with a pH somewhere around 5, and plant proteins all share the same weakness, because each of them has a precise point, called the isoelectric point, where it loses the electrical charge that keeps it away from its neighbours and starts sticking to them instead. Soya is the documented case: its proteins reach that point between 4 and 5, exactly where the coffee takes them, and soya is also the most susceptible of the four to acidity. Heat speeds the whole thing up, which is why the flecks appear in the instant the drink touches the espresso and not a minute later. Oat carries very little protein of its own, and it is the one that goes wrong least often.

The acidity regulators in the barista versions work as a buffer and hold the pH away from that zone, and that is why a barista carton puts up with coffee while the same drink in its table version tears apart. Three habits still help, even with the right carton in your hand. The first is to steam and pour straight away, because a drink just out of the fridge meeting an espresso that has gone cold is the worst combination available. The second is to stop around 65 °C (149 °F), since past that point the proteins are damaged anyway and the foam collapses. The third is about the coffee: if the splitting repeats with every brand you try, change roast, because a very light and very acidic coffee is the hardest one of all to hold together.

What the word barista on the carton actually means

Cappuccino foam is built by two materials working together: the proteins, which arrange themselves around the air bubbles and hold them still, and the fats, which give the foam the dense, glossy texture we call microfoam at the counter. Whole cow's milk carries both, in a good ratio, which is why it froths even in the hands of somebody who has never seen a steam wand. A table version plant drink is designed to be drunk cold out of a glass, and in that recipe protein and fat sit where the taste wants them, with no regard at all for foam.

The barista versions are the same raw material reformulated for a hot cup, and the differences are there to be read on the label. In oat, which carries very little protein of its own (0.8 g per 100 ml), the foam is built by sunflower oil and by pea protein added on purpose, with 3 g of fat giving the body. In soya the protein is already there, 3 g per 100 ml, which is the historical reason soya has always been the plant drink that froths best. In almond, where both protein and fat stay low (0.5 and 1.2 g), most of the work falls to the stabilisers, gellan gum and guar gum. And coconut, which would never froth on its own, carries a share of hulled soya inside it, 2.9 per cent of the recipe.

Then there is the ingredient nobody looks at, and it is the one that decides whether the cappuccino reaches the table in one piece: potassium phosphates, listed on the label as acidity regulators. All four contain them, and they are there for a single job, which is to stop the drink from noticing how acidic the espresso is.

Oat, soya, almond and coconut, one at a time

Oat

It is the choice that goes wrong least, and over the last few years it has become the default in coffee shops across the UK and northern Europe. The oat drink in the barista version froths into a dense, stable cream, brings a natural sweetness that reads as cereal, and leaves the coffee room to be heard. In the cup it makes a round cappuccino, with the glossy surface that holds a pattern, and it forgives a great deal to anyone still learning the wand.

Soya

It is the most technical of the four and the least expensive. Barista soya froths with structure and holds the foam a long time, because those proteins do exactly the job they are there for, and the taste stays neutral enough to keep out of the coffee's way. It is also the most susceptible to acidity, so it is worth steaming and pouring without hanging about, and when things go the way they should it is the plant drink that gives the cleanest latte art.

Almond

Barista almond is the lightest of the four and the least intrusive on body, and it brings a toasted note that sits beautifully next to a chocolatey coffee. The foam is thinner and more fragile than oat's, so it is better served the moment it is made rather than left to sit in the jug. It is the choice for anyone who wants the coffee in the foreground, with the milk as backdrop instead of lead.

Coconut

Barista coconut is the most characterful of the four: it moves the cup towards sweet and tropical, and with a coffee that already carries yellow fruit or honey it builds something closer to a dessert than a breakfast. It works well as long as it stays a deliberate choice, because it is also the one that tires first if you drink it every morning. Worth knowing before you buy: it contains soya, so anyone who has to avoid soya should look elsewhere.

How to steam a plant-based drink for a cappuccino or a flat white

With a steam wand the movement is the same as with milk, with a narrower margin for error. Fill the cold jug to a third, keep the tip just under the surface for the first few seconds (that hiss is the air going in), then sink it and set the liquid turning on itself until the jug is too hot to keep your hand on it for three seconds: that is around 65 °C, and with almond it is worth stopping a few degrees earlier. Then tap the base of the jug on the counter and swirl to close the big bubbles.

Without a wand you get close enough. An electric milk frother does an honest job if the drink has already been warmed, and failing everything else you heat it in a pan, pour it into a jar with a lid, shake for twenty seconds or so and tap the base on the counter. The one thing that never works is rebuilding a foam that has already collapsed: a plant-based drink that has gone cold stays gone, and it is better to start again with fresh product.

When whole cow's milk is still the right answer

This is the part that does not suit us, and we are writing it anyway. If lactose gives you no trouble, if you have made no ethical choice about it, and what you want is the cappuccino exactly as your coffee shop makes it, whole cow's milk costs less than all four of these cartons, froths more easily, forgives mistakes in temperature and carries a fat that rounds the coffee off instead of having to accommodate it. No plant-based drink, however well formulated, reproduces that result exactly.

Plant-based drinks get chosen for a reason, and there are three good ones: people who do not tolerate lactose, people who have decided to stay away from animal products, and people who simply prefer the taste. If you recognise yourself in one of the three, everything written above exists to make them work at their best instead of being endured. If you recognise yourself in none of them, you already have your cappuccino, and your money is better off inside a better coffee.
