There are two ways a coffee can let you down, and you already know both: the one that grips your tongue with bitterness and leaves your mouth dry, and the one that stings with acidity and disappears without a thread of sweetness. They look like opposite faults, and they tell the same story seen from two sides, water that carried too much away and water that carried too little.
Between those two ends sits a narrow, generous zone where coffee turns sweet, round and full of what the bean actually had to say. That zone has a name, extraction, and it is the difference between hoping a cup comes out well and knowing how to make it come out well every morning, with what you already have in the kitchen.
The short version: what decides your cup
If you are in a hurry and have a brew to rescue right now, here is the summary: bitter and dry coffee gave up too much to the water, sour and hollow coffee gave up too little, and you have six levers for moving in either direction.
- Grind size. Finer extracts more, coarser extracts less. It is the most powerful lever you have.
- Temperature. The useful window sits between 90 and 96 °C (194 to 205 °F). Hotter extracts more, cooler extracts less.
- Time. Every method has its own window, and the longer the contact lasts the more the water takes.
- Coffee to water ratio. Around 1:2 for espresso, between 1:15 and 1:17 for filter methods.
- Water. If it has a taste on its own, you will find that taste in the cup.
- Freshness and rest. A coffee straight out of the roaster still holds the carbon dioxide of roasting, and that gets in the way of extraction until it has left.

What actually happens when water meets coffee
The bean you grind every morning is a small warehouse of different substances: organic acids, simple sugars and sugars caramelised by the roast, oils, aromatic molecules running from jasmine to dark chocolate. Of that whole repertoire only a part is soluble, able to dissolve in water and reach you. The rest stays in the grounds, silent, and you will never taste it.
The water you pour does more than dissolve coffee the way it dissolves sugar: it takes it apart piece by piece, and it does so in a precise order, set by how hard each molecule finds it to let go. The lightest first, then the sweetest, the heaviest at the end. What you call taste is simply the point where you decided to stop that sequence.
One thing is worth adding, because almost nobody says it: the coffee bean is the seed of a red fruit, the coffee cherry, and before it reached your grinder it was picked, processed, dried and roasted. Every one of those steps left a trace in the flavour you are about to find. Extraction is the last link in the chain, and the only one you control.
First act: the acids and the bright notes
The first seconds are the fastest. Hot water touches the grounds and starts carrying off the simplest molecules, the ones that dissolve without resistance: citric acid, malic acid, chlorogenic acid. They are what gives coffee its liveliness, that sense of freshness on the tongue when you taste a good specialty, and every fruit note comes from here, the raspberry, the peach, the citrus.
The fats leave alongside the acids, building the body of the drink, together with the first light aromatic molecules: white flowers, fresh herbs, now and then a hint of bergamot. If extraction stops here the result is sharp, thin and unbalanced, and it has a name, under-extraction: all introduction and no chorus.
If you have ever had a coffee that was almost piercing, leaving your mouth sharpened instead of satisfied, that is what had happened: the water collected only this first part and stopped before it reached the sweetness.
Second act: the sweet heart
After the acids come the sugars, the ones already in the green bean and the ones caramelised during roasting. This is the middle phase, the golden point, where coffee turns round and complex: sweetness balances acidity, the body fills out, the aromas layer up between caramel, milk chocolate, dried fruit and honey.
This is the phase every good brew tries to stretch as far as it will go. Stopping here, once extraction has given its best without going further, means a cup with character and no aggression, sweetness with no syrup, complexity with no confusion. When you make a coffee and think "there, that is exactly what I wanted", you almost always stopped at this point.
Third act: bitterness and fibre
If the water stays in contact with the grounds too long, because the temperature is high, because the grind is too fine or because you kept pouring past the point, the heavier compounds start to dissolve: tannins, alkaloids, plant fibre. Remember that coffee is a seed? These are its structural parts, the ones the plant used to build itself, and they have nothing pleasant to offer a cup.
The result is bitter, dry and hollow. It has little to do with the noble bitterness of dark chocolate, which comes from the roast: this is the astringency of overboiled cabbage, of tea forgotten in the pot for an hour. It is called over-extraction, and once you have tasted it you recognise it for life.
From here comes the rule that holds for any method: when the cup is sour you extracted too little, when it is bitter you extracted too much, and the right point sits in the sweet middle. Everything you do while making coffee, from the grind to the water temperature, exists to reach that point and stop there.

Grind size, the control that governs everything
If extraction is a song, the grind is the tempo you play it at. Too fine and everything speeds up: the water struggles to pass, stays in contact longer than it should and ends in bitterness. Too coarse and everything slows down: the water runs away before it has collected the sweetness and stays in the sour. The right grind is the one that lets water flow at exactly the speed it needs to take the sweet heart and nothing else.
The mechanism is simple. Grinding increases the contact surface between water and coffee, and more surface means faster extraction. At the same time it changes the resistance to flow: a very fine powder compacts and holds the water back, a coarse one lets it run. The right point is where the resistance slows the water just enough to pull out the sweetness, without blocking it and pushing it into bitterness.
How fine to grind, method by method
- Espresso. Fine, close to flour, finer than table salt. Water passes at high pressure through a compact layer and needs resistance to slow it down. If the shot runs in 15 seconds you are grinding too coarse, if it takes 50 seconds you are grinding too fine.
- Moka. Medium-fine, coarser than espresso. The moka is the aluminium stovetop pot that lives on the hob in most Italian kitchens, pushing water up through the coffee with steam pressure: it works at low pressure and keeps the coffee over the flame for a long stretch, so an espresso grind will over-extract in it. Aim for table salt rather than flour.
- V60 and filter methods. Medium, the grain of granulated sugar. If the water drains through in one minute grind finer, if it takes six minutes grind coarser. When the speed is right the coffee bed settles flat and even, which is the sign that extraction was uniform.
- French press. Coarse, like sea salt or breadcrumbs. Immersion runs for several minutes and a fine powder leads straight to over-extraction: the particles should stay visible, and the plunger should go down with almost no resistance.
- AeroPress. Medium-fine, caster sugar, a touch finer than the V60. It is the most elastic method of them all, and you can move the grind depending on whether you want to lean towards espresso, short and concentrated, or towards filter, long and sweet.
Why burrs beat blades
A blade grinder chops at random and gives you big pieces, small pieces and fine dust all at once. The water can only behave accordingly: it over-extracts the smallest particles and leaves the big ones behind, and what reaches the cup is a confused, flat taste that cannot be corrected, because it already contains both errors.
A burr grinder works the other way: it crushes the bean between two surfaces and produces particles of similar size, which water passes through at the same speed. The result is clean, defined, and above all repeatable tomorrow. If you are using a supermarket electric grinder and wondering why coffee at home never tastes like coffee made by someone who does this for a living, the answer almost always starts here, and a good hand grinder like the Comandante C40, a burr grinder, lasts a lifetime.
Temperature, the thermostat of flavour
Water at different temperatures carries off different compounds, and it is basic chemistry: the hotter it is the more energy it has, the faster it breaks bonds and drags flavour out. That does not make boiling better, quite the opposite, because above a certain threshold it starts collecting things you would rather have left in the grounds.
The right window, and how to hit it without instruments
The useful zone sits between 90 and 96 °C. Below 90 extraction slows too much and you risk stopping in the sour part; above 96 the water starts pulling out bitterness and astringency. If the coffee comes out sour try raising the temperature by two or three degrees Celsius, if it comes out bitter drop it by the same amount: these are tiny adjustments, and they change the cup more than you expect.
With a moka you have very little control, because the water boils and arrives at whatever temperature it arrives at: the only real lever is taking the pot off the heat as soon as it starts to gurgle, before the steam overheats the last part of the extraction. With a V60, an AeroPress or a French press you decide, and if you have no thermometer it is enough to bring the water to the boil, switch off and wait between thirty and sixty seconds: you are inside the window.
With espresso the machine handles the temperature, and this is where differences show. Simpler machines work at a fixed temperature, often higher than necessary, while machines built for control, like the La Marzocco Linea Micra, let you choose the exact degree and repeat it every time.
Light and dark roasts ask for different degrees
There is one last variable to account for, and it is the coffee itself. A light roast keeps a dense, resistant cell structure, so it takes more energy to open: stay towards the top of the window, around 95 °C (203 °F). A dark roast has a structure already made fragile by the heat of roasting and gives itself up easily, sometimes too easily: come down towards 90 or 92 °C (194 to 198 °F) and you avoid pulling out bitterness you have no use for.
Time, the variable you can read without tasting
Every method has a time window in which the water gets through the three acts and stops in the sweet heart. You read time more than you set it, because it is the direct consequence of grind, temperature and dose: when it falls outside the window, the variable to correct is almost always the grind.
- Espresso. Between 25 and 30 seconds, with water pushed at around 9 bar through a compact layer. Under 20 seconds the cup comes out sour and hollow, past 35 it turns bitter and astringent.
- Moka. Between two and three minutes from the moment the coffee starts rising. One minute means the flame is too high and the coffee is over-extracted, five minutes means the flame is too low and extraction is slow and uneven.
- V60. Between three and four minutes in total, bloom included: thirty seconds of waiting at the start, then slow, continuous pours up to the final weight. Under two minutes grind finer or slow your hand down, past five grind coarser.
- French press. Between four and five minutes of immersion. Under four it stays behind, past six it turns bitter and muddy.
- AeroPress. Between one and two minutes with the standard method, up to three or four with the inverted method and a long immersion, depending on whether you are after concentration or clarity.
Espresso and filter are two opposite roads to the same sweet point, and we wrote a separate piece on what really changes between the two. If you want one device that holds both together, the AeroPress is still the most forgiving thing to learn on.
Dose and ratio: how much coffee and how much water
Dose is how much coffee you put in. Ratio is how much coffee you put in compared with the water. They are two different things and both count, and if you could keep only one, keep the ratio, because it decides the concentration of the drink and therefore how strong, how full and how sweet it reads.
The ratios that work
For espresso the standard today is around 18 g of coffee for 36 g in the cup, which is 1:2. With 14 g becoming 28 you get a lighter, more acidic cup; with 20 becoming 40 a fuller one, which slides towards bitterness more easily.
For filter methods, from the V60 to the French press, the reference ratio sits between 1:15 and 1:17: fifteen grams of coffee for 240 ml of water, or twenty grams for 320 ml. Inside that zone coffee has body, sweetness and definition; outside it, it either gets concentrated enough to bury the complexity or diluted enough to lose its structure.
The moka is a case of its own, because it decides the dose for you: you fill the basket without tamping, the water reaches the valve, and the ratio is what it is. The only levers left are the grind and the flame, which is why grind size counts double on a moka.
Why a scale changes everything
The scoop, the spoon and the eye all tell the same lie: volume and weight are different things, and two spoonfuls of the same coffee ground differently weigh differently. Filter methods need accuracy to the gram, espresso needs the tenth, and in both cases the difference between guessing and weighing shows up on the first sip.
The real jump comes from the timer. Weighing the coffee, taring, pouring the water and watching how many grams are going in alongside how many seconds have passed means having two of the six levers in front of your eyes at once. The Rhino Brewing Scale, with a built in timer, is made for filter and takes a full carafe, while the Timemore Basic 2.0 sits comfortably under a cup.
Water, the ingredient nobody tastes
What you drink is almost entirely water, and the small dissolved part carries all the flavour. One consequence follows that few people consider: if the water has a character of its own, that character ends up in the cup and mixes with the coffee; and if it has too few minerals or too many, it even changes the speed at which coffee dissolves.
Hardness
Hard water, rich in calcium and magnesium, extracts with more energy, because the minerals act as a go-between and help carry the flavours out. If the hardness is excessive, though, extraction goes too far and the cup turns bitter and heavy. Water that is too soft, close to distilled, does the opposite and leaves coffee flat and bodiless, as though something were always missing.
The comfortable band sits between 50 and 150 parts per million of total hardness: enough minerals for sweetness and complexity, not enough to pull out bitterness. Bottled water gives it on the label as dry residue, and a low mineral supermarket bottle inside that range does the job at no real cost.
Chlorine, iron and the taste of pipework
If your tap water tastes of chlorine, your coffee will taste of chlorine, and no recipe will mask it. The fix is close at hand: a carbon filter of the kind that goes in a filter jug, or simply leaving the water out in the open for a few hours, because chlorine evaporates on its own. If you can taste earth, iron or pipework instead, that is water to keep away from coffee.
The most honest test takes five minutes: make the same coffee twice, once with tap water and once with bottled, and taste them side by side. If the difference jumps out you have found your problem; if the two are similar, your water is fine and you can stop thinking about it.
The bloom, coffee's first breath
There is a moment anyone who brews filter knows well, and it is worth watching every time. You pour the first water onto fresh grounds and the bed swells, lifts, bubbles as though it were catching its breath. It is effectively breathing: that is the carbon dioxide from roasting rushing out, and while it is in there it keeps the water at a distance.
Why a freshly roasted coffee wants a few days
During roasting, carbon dioxide forms inside the bean, and the coffee starts releasing it the moment it leaves the roaster. This is degassing, and in the first days it is lively enough to get between the water and the coffee: the water cannot wet the grounds evenly, and extraction comes out patchy, with some points already bitter and others barely touched.
Resting times depend on the roast. A light roast like the one we use for our single origins, the Ethiopia Sidamo Finca Habesha for instance, gives its best after a week or two. A medium settles between the fifth and the tenth day, a dark is ready after three or four. We roast on a 6 kg Giesen and print the roast date on every bag, and that is exactly what it is for: to let you work out where the coffee in your hand is in its life.
How to bloom
The bloom is the pause you give the coffee at the start: you pour a small amount of water, twice or three times the weight of the grounds, and wait between thirty and forty-five seconds before continuing. In those seconds the carbon dioxide leaves all at once and clears the space for the water that follows, which can finally wet every particle the same way.
It is also the most sincere freshness test there is. If the bed swells and bubbles, the coffee is alive; if it just gets wet and sits still, degassing finished a long time ago and the most volatile aromas went with it. Next time you set up a ceramic V60, stop and watch that half minute: it is the most honest part of the whole brew.
Channelling, when water finds a shortcut
Channelling is the word that puts anyone behind an espresso machine on alert. It means the water, instead of crossing the coffee evenly, has found a weak point, a crack or a less compact area, and has started running entirely through it. It works like a river carving its channel: once the easiest way is open, the water looks for no other.
The result is the hardest cup of all to read, because it contains both errors at once. Where the water passed and passed again the coffee is over-extracted and bitter, where it never arrived it stayed under-extracted and sour, and what you taste is the sum of the two, with no sweetness in between. In espresso you spot it by looking at the puck in the basket after the shot: a hole, a crack, a scooped out patch, and the water went through there. In filter methods it gives itself away through a coffee bed that settles at an angle instead of flat.
Preventing it is easier than fixing it, and it comes down to three gestures.
- Distribute before you tamp. The coffee has to fill the basket evenly, with no mounds and no gaps, and your fingers or a distribution tool are enough.
- Tamp level. Being horizontal counts for more than force: a flat tamper pressed perpendicular beats any amount of muscle.
- Grind evenly. If the particles come in different sizes the water will always prefer the wider routes, which brings us back to burrs.
In filter methods the phenomenon is less dramatic, and it exists all the same: you keep it in check by pouring slowly, in circular movements, without dumping all the water in one spot.
Your coffee is already telling you what is wrong
Here is the practical part, the one to keep open next to the machine. Every fault in the cup has a predictable cause and a move that corrects it, and in most cases the move is a single one: change one variable at a time, taste again, and only then move to the next.
Why is my coffee sour?
It is under-extracted: the water stopped at the first act and never reached the sugars. Usually it came through too fast, and the most effective correction is grinding finer, which slows the flow and increases the contact surface. If that is not enough, raise the temperature by two or three degrees, stretch the time by pouring more slowly or extending the immersion, and use a touch more coffee against the water.
Why is my coffee bitter?
It is over-extracted: the water reached the tannins and the fibre, and your tongue is left dry the way it is after a tea brewed too strong. Grind coarser to let the water run, drop the temperature by two or three degrees, shorten the contact time and open the ratio slightly towards the water. If the bitterness tastes burnt rather than dry, the cause can sit further upstream, in the roast, and we covered that in why so many coffees taste burnt.
Why does my coffee taste weak and flat?
Here the problem rarely sits in the recipe. The typical causes are three: a coffee that has lost its aromas because it was left open to the air, an uneven grind that mixes over-extracted and under-extracted until the two cancel out, or water too poor in minerals to carry the flavour out. Check in that order how the coffee is stored, which grinder you are using and what water is in your kettle.
Why is my coffee bitter and sour in the same sip?
This is the signature of channelling or of an uneven grind: over-extracted and under-extracted parts live together in the same cup, and no recipe correction fixes them, because adjusting for one makes the other worse. It gets solved upstream, with burrs in place of blades, even distribution, a level tamp and slow circular pours in filter methods.
Why does my espresso have no crema?
Crema forms when pressurised water emulsifies the oils in the coffee, so when it is thin or absent it means there are few oils left, in a coffee that has aged, or that extraction ran away too fast: fresh coffee and a finer grind sort it out nearly every time. When it comes out dark, going towards burnt brown, with big bubbles that break straight away, you have extracted too much or you are working with a very heavy roast. The crema you are after is hazelnut coloured, with reddish highlights, and it holds together for a few seconds.
Why doesn't my coffee bloom?
Because degassing is over. It is no fault of your brewing and no recipe corrects it: that coffee has already given what it had, and the only answer is opening a more recent bag. It is worth looking at the roast date before blaming the machine.
The tools that genuinely change the result
Making good coffee at home needs no laboratory kitchen, and the list of essentials is shorter than it looks. If you had to put them in order of impact, this is the order to buy them in.
- A burr grinder. The investment that counts more than any other, because no recipe corrects an uneven grind. Hand or electric makes little difference, as long as it grinds between two surfaces rather than with blades.
- A scale with a timer. It puts weight and time in front of you together, two of the six levers, and turns a lucky brew into a repeatable one.
- A gooseneck kettle. For filter methods it gives control over where the water falls and how fast, and models with a thermometer settle the temperature question too.
- A kitchen thermometer. If the kettle has none, this alone keeps you inside the window between 90 and 96 °C.
- An airtight container. Coffee fears air, light, heat and damp, and a container like the CoffeeVac vacuum canister slows down the first of those four enemies, the one that moves fastest.
The grinders and scales we keep in the shop are the same ones we use ourselves: we chose them by using them, and we recommend them for how they behave after months of daily work.
Freshness, the variable that comes before all the others
You can own the most expensive machine in circulation, the most precise grinder and the cleanest technique: if the coffee in the bag has stopped being interesting, the cup will not become excellent. That is why freshness is the first variable of extraction, the one that sets the ceiling for all the others.
The delicate point is that freshness means more than recent. A coffee roasted well and kept away from air, light and heat stays in very good shape far longer than the usual talk suggests, comfortably for a couple of months and often beyond, while the same coffee left open on the kitchen worktop loses its brightness in a week. What consumes coffee is how you keep it, much more than the calendar.
The roast date is still the most useful piece of information you can have, because it tells you whether the coffee is still degassing or has entered its best window. On supermarket bags that date is often missing: there is a best before instead, months further on, which tells you nothing about when the bean went through a roaster. The checklist before every brew
Ten checks, in order, covering everything you have read so far.
- Freshness. Do you know when it was roasted? If only a few days have passed since roasting, let it rest a little longer.
- Storage. Was it closed properly, away from light and heat, or has it been sitting open in the kitchen for weeks?
- Grind. Burrs, set for the method, and ideally moments before you brew.
- Dose and ratio. Are you weighing coffee and water? Around 1:2 for espresso, between 1:15 and 1:17 for filter.
- Water. Does it taste good on its own? If it tastes of chlorine filter it, if it tastes of metal change it.
- Temperature. Between 90 and 96 °C, higher for light roasts, lower for dark ones.
- Distribution. Espresso only: is the coffee level in the basket and the tamp perfectly horizontal?
- Bloom. Filter methods only: thirty to forty-five seconds of pause after the first water.
- Time. Did extraction stay inside the window for the method, or did it run away in one direction?
- Taste. Before you add sugar or milk, taste and listen: sour means one thing, bitter means another, sweet and round means you hit the point.
And then comes the moment you drink it
Making coffee is chemistry, and drinking it is another matter. You can respect every rule, control every variable, weigh to the tenth of a gram, and still miss the best part if you never stop to taste properly, with attention, for as long as it takes. Coffee is a moment when the pace slows and the senses take over: the aroma first, the warmth of the cup between your hands, the first sip still too hot and then the second one, the right one.
It is also the reason we print the roast date on every bag instead of a best before months away. It gives you a fixed reference point: when you know the coffee and you know its age, every change you make to grind, temperature or ratio tells you something true about your own kitchen.

The first time a cup stops you halfway through a sip because it is exactly what you wanted, you will be able to name what you did to get there. That is extraction, and it is now yours to repeat.
