At an elevation of 1200-1400 meters, the farm covers 76 hectares and is home to several coffee varieties, including Caturra, Catua\u00ed Amarillo, Catua\u00ed Rojo, Maracaturra, Ovata, Parainema, Marcelleza, and Geisha. Coffee plants thrive in sandy loam soil, and their roots absorb rich nutrients that result in flavor-rich beans. With an average yield of 18 quintals of parchment per hectare, Agua Sarca contributes significantly to the local coffee economy.   <\/p>\n<p>The farm employs 25 permanent workers, but the team expands to 85 people during the harvest season, which typically runs from November to March. Environmentally friendly practices are strictly followed on the farm in coffee cultivation. Trees are pruned regularly for better yields, fertilized with a combination of organic and mineral fertilizers, and only low-intensity pesticides are used. The team is trained to pick only the ripest coffee cherries, ensuring that quality is maintained throughout the harvesting process.   <\/p>\n<p>The <strong>Maracaturra coffee variety<\/strong> is a hybrid of two other varieties, Maragogipe and Caturra.<\/p>\n<p>Maracaturra was developed mainly in Nicaragua and spread from there to Central America. The distinguishing characteristic of this variety is the size of the coffee beans, which are considerably larger than those of other varieties. This peculiarity can affect the flavor of the resulting cup&#8230; Flavor can vary depending on terroir, cultivation methods and processing techniques, but often has fruity notes, lively acidity and full body.<\/p>\n<p>Maracaturra is more susceptible to disease than other varieties because of the greater exposure to rainfall caused by the larger grain size.
